Vineyard: Nerello Mascalese 100%.
Cultivation system: sapling on lava stone terraces.
Age of the vinyards: 80 years.
Production Area: East side of Mount Etna, Contrada Rocca d’Api, in Zafferana Etnea.
Altitude: 500 m a.s.l.
Climate: of high hills with wide fluctuations in temperature between day and night.
Type of soil:volcanic sandy, mixed with stones, rich in mineral salts.
Vine density: 7.000 plants per hectare.
Yield per hectare: 40 Ql.
Vinification: harvest in early October in small boxes with careful selection of the grapes. After destemming, the grapes ferment on the skins at 20/22 ° C with repeated pumping over until the end of fermentation for about 3 weeks.
Ageing: 3 months on fine lees, 18 months in large casks of Etna chestnut (2000 lt).
Colour: dense carmine red and pearly of garnet reflections.
Bouquet: powerful, rich and elegant. Notes of withered red rose, predominance of spicy, hints of cocoa, leather, tobacco and red fruit jam, mineral of wet stone and balsamic notes.
Taste: dry, intense, velvety, with tannins of elegant evolution , pleasant sapidity, gustative balance and aromatic persistence.
Alcohol content: 13,5 % vol.
Food matches: dishes of great structure, sauces, meat roasts rich in spices, tasty game and very seasoned cheeses. Excellent meditation wine.
Serving temperature: 18-20 °C.
